While it is not particularly eye-opening that Big Food manipulates processed food for maximum impact, the history behind changes in America’s cupboards was interesting. Moss introduces us to the pioneers of manufactured food and explains in three parts (Sugar, Salt, Fat) how each of these affect consumers, what the executives behind the scenes really think of their offerings, and illustrates his points with profiles and anecdotes on food in America. He introduces the concept of the “bliss point” – where the taster senses too much of a good thing. Alarmingly, fat is the one item that doesn’t have a bliss point. If you’re not already disgusted with the plethora of bad-for-you foods, this book will help send you over the edge!
